Xtrema Cookware Review: Is 100% Ceramic Actually Safer?

If you have spent any time in non-toxic kitchen corners of the internet, you have run into Xtrema. It is the cookware that is 100 percent ceramic all the way through, no metal core, no sprayed-on nonstick layer, nothing to flake into your dinner three years from now. You have probably also run into the other Xtrema story, the one with a headline about 16,400 parts per million of lead. Both of those things are on the internet right now but they can't both be the whole truth.

I have been cooking on a 9 inch and an 11 inch Xtrema skillet since December, and I a spent time reading the actual test reports behind that lead headline rather than the just the headlines themselves. What I found is more interesting than either side is telling you. This review covers what the testing actually says, how the pans cook (including the parts that annoy me), what they cost and who I would and would not send to buy them.

Quick Verdict: Xtrema Cookware

My Rating: 4 out of 5

Best for: Searing with real fat, braising, simmering, soups, sauces, oven-to-table dishes and anyone who wants zero applied coatings in their kitchen and is willing to change how they cook to get that.

What it gets right: There is no coating, so there is nothing to wear off. Independent acid bath leach testing at an EPA-certified lab found lead migration far below California Prop 65 thresholds. It takes a real sear once it is hot, heat retention is excellent, the skillets run deeper than a standard fry pan so they do more jobs and one pan goes from stovetop to oven to broiler to grill to microwave.

Where it falls short: It is the slowest heating cookware in independent benchmark testing, it is not nonstick and needs real fat to behave, it will not work on induction, it can break from thermal shock or a drop, and the 10 year warranty specifically does not cover any breakage. Xtrema also publishes its third party testing as pass or fail PDFs without the actual numbers, which is a strange choice for a brand selling transparency.

Price: Roughly 78 to 225 dollars per piece depending on size and line, with frequent sales. A 9 inch Signature skillet was 120 dollars when I checked.

What Xtrema Actually Is

Here is the distinction about Xtrema cookware and it is the entire reason this brand exists.

Most cookware marketed as “ceramic” is not ceramic. It is a metal pan (usually aluminum) with a thin silica-based sol-gel coating sprayed on top. Caraway, GreenPan, HexClad's ceramic line, the pretty pastel sets all over Instagram, those are ceramic coated. The coating is the nonstick surface, and coatings are consumable. They wear, they scratch, they lose their release and all of these coatings eventually wear down to a point that you can expect you to replace a ceramic coated pan in two to five years.

Xtrema is not coated. The whole pan is fired ceramic, the same material through the handle, the wall and the cooking surface, with a glaze fused to it. There is no aluminum underneath, no PTFE, no PFAS, no sol-gel layer sitting on top waiting to degrade. That is the brand's actual claim and it is true. If your concern about cookware is “what happens to this surface in year four,” Xtrema answers that question in a way a coated pan structurally cannot.

You can see it in my own pans. That glossy blue-black surface is fired glaze on ceramic, not a sprayed layer sitting on aluminum and the wall thickness where the two pans nest together shows you there is no metal core hiding in there.

The background here matters more than most brand stories do. Xtrema is made by Ceramcor, founded by Rich Bergstrom, who spent 23 years at Corning Consumer Products before starting it and has more than forty years in ceramics. That is worth knowing when you get to the part about where these are made, because the usual assumption is that manufacturing in China means cutting corners. Bergstrom's argument is that roughly seventy percent of the world's ceramics are produced there and that is where the material expertise lives. You can decide how much weight to give that. I think it is a more honest answer than most brands give, and it is at least the answer of someone who spent two decades making ceramics at Corning.

The tradeoff is that ceramic behaves nothing like metal on a stovetop…we'll get to that. Two more things that are important for this Xtrema review: pans are made by an American company called Ceramcor but the cookware itself is manufactured in China, which the company now states openly on its own site. It is also not induction compatible, because there is no magnetic metal anywhere in it.

The Xtrema Lead Testing Controversy, Explained

This is the section you probably came for, and it is the one every other review skips past in a sentence. So let's go through it more thoroughly, because the two sides of this fight are really measuring two different things.

The XRF results that started it

Tamara Rubin, who writes as Lead Safe Mama, tested Xtrema pieces with an XRF instrument (X-ray fluorescence, the same screening technology the Consumer Product Safety Commission uses) and published readings from five spots on a 1.25 quart Versa pot. Those results got compressed online into one number: 16,400 ppm lead. Here is the full picture, spot by spot.

Read that table again. The number that launched a thousand Facebook posts came from the decorative painted logo on the outside bottom of the pot, the part that sits on your burner and never meets your food. The surface you actually cook on read 19 ppm. Those two numbers are almost three orders of magnitude apart, and the internet flattened them into one.

Here is the whole picture in one place, both tests side by side, so you can see why the two numbers are not actually in conflict.

Here is the stamp on the bottom of my own 9 inch skillet, so you can see exactly what we are talking about. That white printed mark in the center is the spot that produced the 16,400 ppm reading. It is on the outside base of the pan, it faces the burner, and food never touches it. You can also read the line that Xtrema used to be much quieter about: handcrafted in China.

That is not a reason to dismiss the finding. A pigment with that much lead in it is a real thing to know about, particularly if you have small children handling the cookware or you are the person who stacks pans and scrubs bases. But it is also not what “16,400 ppm of lead in your cooking surface” implies and the difference matters.

Why XRF cannot answer the question you are actually asking

XRF tells you how much of an element is present in a material. It does not tell you whether any of it comes out. Those are separate questions and for cookware the second one is the only one that affects you. Lead locked permanently inside a fired glaze matrix is chemically different from lead that migrates into your tomato sauce, even though XRF reads them identically.

The test that answers the migration question is a leach test, where the vessel is filled with an acidic solution meant to simulate years of cooking with acidic food, then the solution is analyzed for what came off. That is the standard regulators use and it's the one that matters.

The leach test results

In April 2024, Mamavation commissioned an EPA-certified laboratory to run acid bath leach testing on two Xtrema pieces. Those results:

Both landed far below California Proposition 65 safe harbor levels. Micrograms, not milligrams, from a bath specifically designed to be harsher than your cooking.

So both testers were right

That's the simple resolution. There is high lead in a decorative logo on the exterior base. There is low lead in the cooking glaze and essentially nothing meaningful migrates into food under aggressive acid testing. Every one of those statements is supported by a real measurement. They only look contradictory if you assume total content and migration are the same thing.

For context on why any of this is worth taking seriously in the first place, low-level lead exposure is not a trivial concern. A large cohort study of more than 14,000 US adults published in The Lancet Public Health found that going from the 10th to the 90th percentile of blood lead was associated with a 37 percent higher risk of all-cause mortality and a 70 percent higher risk of cardiovascular death, at concentrations most people would consider unremarkable. However, that research is about environmental lead broadly, not cookware specifically. But it is exactly why “is there lead in my pan” deserves a real answer instead of a shrug in either direction.

Is Xtrema Cookware Safe? My Read on the Evidence

On the actual exposure question, my read is yes. The leach data is the data that matters, it comes from an EPA-certified lab and it is not close to a threshold anyone should worry about. I cook on mine and I am not planning to stop.

I am less impressed with how Xtrema has handled the conversation, and I think that criticism is fair to keep on the table even though the alarming headline turned out to be misleading.

  • They used to market as “metals-free,” and quietly stopped. All fired ceramic glazes contain metals. That claim was never accurate, and walking it back without acknowledging it is why a chunk of the non-toxic community stopped trusting them.
  • They publish testing as pass or fail, not as numbers. Xtrema's product testing page lists SGS and LFGB results and Prop 65 compliance across 2023 to 2026, but shows “Passed” rather than the measured values and detection limits. Mamavation had to commission its own test to get real numbers into public view. A company charging a premium specifically for transparency should publish the figures. That is a low bar and they are not clearing it.
  • The decorative logo pigment is a genuine loose end. It does not touch food, and I have not seen evidence it poses a meaningful exposure route in normal use, but I would like to see Xtrema address it directly rather than route everything to a general defense of leach testing.

To be even-handed, Xtrema's core rebuttal is correct on the science. They point out that XRF cannot measure how much of a substance leaches out or how much a person is actually exposed to and that is true. They are right about the method and still doing themselves no favors on the disclosure.

Worth zooming out for a second. The reason most people are shopping for pure ceramic in the first place is to get away from PFAS, and that concern is well founded. Research published in Environmental Research identified the use of nonstick coated cooking utensils as a significant predictor of PFAS concentrations in breast milk, and a large NHANES analysis in The Lancet Planetary Health examined PFAS body burden in nearly 12,000 American adolescents and adults, noting non-stick cookware among the common commercial sources. How Xtrema Actually Cooks

This is where I have to be straight with you, because the safety story is the good news and the cooking story is where most people get frustrated and quit.

It is slow. Measurably, provably slow.

Prudent Reviews has run the same water-boil benchmark across more than 26 cookware brands and Xtrema came in last. It took 3 minutes 41 seconds to reach first bubbles and 6 minutes 7 seconds to a full boil. Ceramic is a poor conductor, which is the flip side of the property that makes it good at the next thing.

It holds heat better than almost anything

In the same testing, Xtrema retained heat best of the group, still sitting at 142°F five minutes after the burner went off and 113°F at ten minutes. That is a real advantage for braises, stews, sauces and anything you want to carry to the table still hot. It is also why you cook on it at a lower burner setting than you think, and why cranking the heat to speed it up is the single most common way people ruin the experience.

It sears well, but it is not nonstick

This is where my experience differs from a lot of what I read before I bought mine. Plenty of reviews frame Xtrema as a pan that food sticks to. Mine cook fine. I get a proper sear, the kind with real crust and browned bits left in the pan afterward, which is not something I expected from ceramic.

The honest caveat is the fat. Xtrema needs oil to be truly nonstick. At least a slight film of your favorite cooking oil on it. Give it that and food releases; go too light because you are trying to cut calories and it will grab, especially with eggs and lean protein. So the accurate way to describe this pan is not “food sticks,” it is “this is a fat-dependent surface, like stainless or cast iron, and you have to cook it that way.” If you were hoping to fry an egg dry the way you can in a coated pan, let go of that expectation.

Cleanup has been the easy part and I did not expect that. Seven months of regular use and neither pan has stained at all, which surprised me for a dark glazed surface. They wipe out without much scrubbing or soaking. If you have ever fought a ceramic-coated pan that went permanently brown in year two, this is the opposite experience so far.

It will not work on induction

There is no magnetic metal in the pan, so an induction cooktop has nothing to grab. If you have induction, this is a hard stop, not a workaround. Gas, electric coil, glass top, oven, broiler, grill and microwave are all fine.

The depth is the underrated part

Nobody talks about this and I think it is the most useful thing about the pans. The Xtrema skillets are noticeably deeper than a traditional fry pan of the same diameter. The walls come up higher and flare less, so the same pan that sears a burger will also hold a pound of ground beef with sauce, braise chicken thighs, cook down a pan of greens without them tumbling over the side or take a shallow braise into the oven.

Practically, that means one Xtrema piece replaces a skillet and a sauté pan. When you are looking at these prices, that matters to the math. It is also part of why I reach for the 11 inch more than I expected to: between the depth and the oven and broiler rating, it covers most of what I would otherwise pull two pans out for.

Weight and handles

Xtrema is heavy, though LeafScore's testing put it at roughly 40 percent lighter than equivalent cast iron. The handles are ceramic, which means two things: they are short and they get very hot. You will use a towel or mitt every single time. I like to keep these silicone handle protectors on hand for that reason.

If wrist strain is a consideration for you, size down before you size up. The 11 inch is the one I actually use most but the 9 inch is noticeably lighter.

How to Use and Care for Xtrema

Almost every complaint I read about this cookware traces back to someone using it like a metal pan. It is not one, and the learning curve is about four rules long. Here is what Xtrema says to do, and where my own experience lines up with it.

Preheat low and slow, then add the fat

This is the whole ballgame. Xtrema's official instruction is to preheat for 3 to 5 minutes on your lowest setting before any oil goes in, and to stay at or below medium after that. Not medium high. Not “medium but I am in a hurry.” The pan holds heat so well that medium on ceramic behaves like medium high on stainless, and once it is hot it stays hot.

If you skip the slow preheat and drop food into a cold pan, it grabs, and that is where the “food sticks to Xtrema” reviews come from. Think of it the way you think about preheating an oven. You would not put a roast into a cold one.

There is no seasoning step, but oil still helps

Unlike cast iron, Xtrema needs no seasoning and no break-in. Wash it and cook. That said, cooking with a real fat, avocado oil, olive oil, ghee or butter, builds a working release surface over time, which matches what I described in the searing section. The fat is not optional the way it is with a coated pan.

Utensils: wood, silicone or nylon

Here is a nuance most reviews get backwards. Metal utensils will not scratch Xtrema, because fired ceramic is harder than your spatula. What metal does is leave grey marks on the glaze, the same way a fork marks a dinner plate. Cosmetic, not structural, but it will make the pan look tired. Wood, silicone or nylon avoids it entirely.

Cleaning, and yes it is dishwasher safe

Hot soapy water handles almost everything. For anything stuck on, Xtrema's own fix is dry baking soda and a scouring pad, which works because you cannot damage the glaze the way you would a coated pan. Being able to attack a pan with an abrasive and not ruin it is one of the quiet advantages of having no coating.

It is dishwasher safe. I hand wash mine out of habit, and seven months in neither pan has stained at all, which surprised me for a dark glaze. If you have ever thrown out a ceramic-coated pan because it went permanently brown, that is the comparison worth making.

Store them with something between the pieces

This is the tip I would put on a sticker inside the cabinet. Xtrema will not scratch, but it will chip, and stacking bare ceramic on bare ceramic is the most likely way you will damage a pan that is otherwise almost impossible to wear out. A folded dish towel between pieces is enough. Xtrema sells padded protectors if you want the tidier version.

Respect thermal shock

Ceramic dislikes sudden temperature drops more than it dislikes heat. Xtrema's guidance is to thaw frozen food before it hits the pan, never run cold water into a hot one, and be careful setting a screaming hot pan down on a cold stone counter. This is the single failure mode the 10 year warranty does not cover, which I get into next, so it is worth the extra thirty seconds of patience.

Durability, Thermal Shock and the Warranty Fine Print

Ceramic is hard, scratch resistant and rated to extremely high oven temperatures. However, ceramic is also brittle. Drop it on a tile floor and it is done and a sharp temperature swing (a hot pan hitting cold water, or a cold pan onto a screaming burner) can crack it.

Seven months in with two pans, neither has chipped or cracked and I have not been especially careful with them. I will say that seven months is not long enough to call anything a long-term durability verdict and I will update this review if that changes. What I can tell you is that normal cooking has not hurt them.

Now the part I want you to read carefully, because it is buried on Xtrema's site and it is the opposite of what most people assume. There are two separate programs and they cover different things.

So the 10 year warranty does not cover the thing most likely to happen to a ceramic pan. The Forever Replacement Program is the one that actually protects you against breakage and it is a good policy. Note that it is customer-based rather than product-based. You get one free replacement, ever, across your whole collection. After that you are paying 60 percent of retail each time.

The return window, and the fee nobody mentions

Separate from both of those programs, there is a plain 30 day return window, and the fine print here is worth reading before you order. A non-defective return has to come back clean, unused and in its original packaging, you pay the return shipping, and there is a 15 percent restocking fee on anything you have actually cooked with. Defective items are different, Xtrema covers that shipping.

I want to be straight about what that means for the advice I gave in the pricing section. Buying one piece first is still the right move, but it is not a free trial. The moment you cook on it you are roughly 15 percent plus shipping into a commitment. So use the 30 days to decide whether you will genuinely change how you cook, and do that thinking before the box arrives rather than after.

What Xtrema Costs

Prices below were current when I wrote this, during a 25 percent off promotion. Xtrema runs sales frequently enough that I would not pay full list, and the list prices in parentheses are what things revert to.

That is All-Clad and Le Creuset territory. Here is the honest cost math, though, and it is the argument that actually works in Xtrema's favor. A quality ceramic-coated pan runs 100 to 150 dollars and most manufacturers expect you to replace it every two to five years as the coating wears. Over fifteen years that is three to seven pans, or 300 to 1,000 dollars, and a pile of landfill. An Xtrema piece has no coating to wear out, so the only thing that ends its life is you dropping it. If you are careful, one pan can plausibly outlast four coated ones.

My honest advice on buying: start with one piece, not a set. This cookware asks you to change how you cook and you want to find out whether you will actually adapt before you spend 600 dollars finding out you will not.

My Verdict

Xtrema lands at 4 out of 5 for me. Seven months in, these are pans I use constantly and would buy again, and the thing keeping them from a 5 is not the cookware itself.

The safety case holds up. The scary number came from a painted logo on the outside bottom of a pot, the cooking surface tested low, and acid bath leach testing at an EPA-certified lab found migration in micrograms, well under Prop 65 thresholds. If your reason for looking at pure ceramic is getting coatings out of your kitchen permanently, Xtrema delivers that in a way a coated pan cannot.

The cooking is better than I expected, and I want to correct the record there, because the reviews that told me food would stick undersold these pans. Mine sear beautifully. What they need is fat, and if you cook with real oil that is a non-issue. The extra depth has made them more useful than a standard skillet, which nobody seems to mention, and cleanup has been easy with no staining at all.

So what holds it back from a 5? It is the slowest heating cookware in independent benchmark testing, it is heavy with short hot handles, it will not touch an induction cooktop, the price is steep, and the 10 year warranty specifically excludes the cracking and breakage that ceramic is most prone to. Most of all, a company that built its whole identity on transparency should be publishing its actual test numbers rather than pass or fail PDFs. That last one is the point I am holding back, and I would happily revisit it the day they publish the figures.

My real recommendation: buy one piece and live with it for a month before you commit to more. If you are the kind of cook who preheats slowly, uses enough fat and is not in a rush, you will likely keep it for the rest of your life. If you want to throw a pan on high and have eggs slide out of a dry surface, you already know this is not your cookware, and there is no shame in keeping one small coated pan for eggs and using ceramic for everything else. That is what a lot of thoughtful kitchens actually look like, including mine.

Is Xtrema cookware safe?

Based on the leach testing, yes. An EPA-certified laboratory ran acid bath testing on two Xtrema pieces in April 2024 and found 0.072 micrograms of lead from the Signature Skillet and 0.1076 micrograms from the Versa Pan, both far below California Prop 65 safe harbor levels. Leach testing measures what actually migrates into food, which is the number that matters for exposure.

Does Xtrema cookware contain lead?

XRF testing by Lead Safe Mama found 19 ppm lead in the interior cooking glaze and 16,400 ppm in the painted logo stamp on the exterior bottom of the pot. That high reading is from a decorative mark on the outside base that never contacts food, not from the cooking surface. XRF measures total content present, not what leaches out, and leach testing on the cooking surface came back in micrograms.

What is the difference between XRF testing and leach testing?

XRF tells you how much of an element is present in a material. Leach testing fills the vessel with an acidic solution to simulate years of cooking with acidic food, then measures what came off into the solution. For cookware, leach testing is the one that reflects your actual exposure, because a metal locked in a fired glaze can be present without migrating into food.

Is Xtrema cookware nonstick?

No, and this is the expectation to reset before you buy. Xtrema has no applied nonstick coating, which is the entire point of the design. In my own pans it sears well and releases fine, but only with a real pour of oil rather than a light spray. Treat it like stainless or cast iron, a fat-dependent surface, and it behaves. Try to cook an egg dry in it and it will grab.

Does Xtrema work on induction?

No. Xtrema is 100 percent ceramic with no magnetic metal anywhere in it, so induction cooktops cannot generate heat in it. It works on gas, electric coil and glass top stoves, and in the oven, broiler, grill and microwave.

Where is Xtrema cookware made?

Xtrema is made in China. The parent company, Ceramcor, is American and was founded by Rich Bergstrom, who spent 23 years at Corning Consumer Products. The company states on its own site that it chose China because roughly seventy percent of the world's ceramics are produced there and that is where the material expertise sits.

Does the Xtrema warranty cover cracking or breakage?

No, and this surprises most buyers. The 10 Year Craftsmanship Guarantee covers faulty craftsmanship and materials, and explicitly excludes breakage, chipping, cracking and thermal shock. Accidental breakage is handled by the separate Forever Replacement Program, which gives one free replacement per customer and a 40 percent discount on replacements after that, plus shipping.

What is the Xtrema Forever Replacement Program?

It covers accidental damage and breakage on cookware, bakeware and tea kettles without requiring proof of manufacturer fault. Your first replacement is free, then subsequent replacements come at a 40 percent discount and you pay shipping. It is customer-based rather than product-based, so the free replacement applies once across everything you own. Lids and accessories are excluded.

How much does Xtrema cookware cost?

Individual pieces run roughly 78 to 225 dollars depending on size and line. A 9 inch Signature skillet was 120 dollars on sale (160 list) when I checked, and a 12 inch Versa pan was 225 dollars (300 list). Xtrema runs frequent promotions, so it is worth waiting for a sale rather than paying list price.

Is Xtrema worth it compared to Caraway or GreenPan?

It depends on what you are optimizing for. Caraway and GreenPan are ceramic-coated aluminum, so they are truly nonstick and induction friendly but the coating wears out in roughly two to five years. Xtrema has no coating to wear out and can last indefinitely, and it sears better than either, but it is slow to heat, it needs real oil to release, and it will not work on induction. If permanence matters most, Xtrema. If daily convenience matters most, a coated pan.

Is Xtrema cookware dishwasher safe?

Yes. Xtrema is dishwasher safe, and because there is no coating to degrade you are not shortening its life the way repeated dishwasher cycles shorten a ceramic-coated pan. Hot soapy water by hand works just as well, and for stuck-on food Xtrema's own recommendation is dry baking soda and a scouring pad, which you can use freely since there is no surface layer to scratch off.

How do you clean and care for Xtrema cookware?

Preheat 3 to 5 minutes on the lowest setting before adding oil, and stay at or below medium once it is hot. Use wood, silicone or nylon utensils, metal will not scratch the ceramic but it leaves grey marks on the glaze. Wash with hot soapy water or in the dishwasher, and use dry baking soda for anything stuck on. Store with a towel or a padded protector between stacked pieces, since chipping is far more likely than wear. Thaw frozen food before it goes in the pan and never run cold water into a hot one, because thermal shock is the one failure the 10 year warranty does not cover.

Can you return Xtrema cookware if you do not like it?

There is a 30 day return window, but read the conditions first. A non-defective return has to come back clean, unused and in its original packaging, you pay return shipping, and there is a 15 percent restocking fee on any piece you have cooked with. Defective items are handled differently and Xtrema covers that shipping. In practice this is not a free trial, so decide whether you are willing to change how you cook before you order rather than after.
