Instructions
Line an 8x8 baking pan with parchment paper.
In a small saucepan over medium heat, heat the half and half and butter until melted and warm.
Whisk in the collagen until smooth.
Pour in the chips and sweetener and mix until smooth.
Pour the chocolate mixture into the baking pan.
Place the chocolate fudge in the refrigerator for about 30 minutes or until solid.
Repeat the instructions for mint fudge adding in the food coloring and mint.
Pour the mint chocolate layer over the chocolate and refrigerate until firm.
Cut into 16 1/2 inch squares or use a cookie cutter to make fun shapes if desired.
