Ingredients:⁣
3-4 squares @choczero peppermint bark⁣
1 T butter⁣
3 T heavy whipping cream⁣
1 cup unsweetened almond milk⁣
liquid stevia⁣
2 oz vodka, optional⁣
⁣
𝗞𝗲𝘁𝗼 𝗣𝗲𝗽𝗽𝗲𝗿𝗺𝗶𝗻𝘁 𝗛𝗼𝘁 𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗠𝗼𝗰𝗸𝘁𝗮𝗶𝗹 𝗼𝗿 𝗖𝗼𝗰𝗸𝘁𝗮𝗶𝗹 (𝟮 𝘀𝗲𝗿𝘃𝗶𝗻𝗴𝘀)⁣
⁣
1. Using a double boiler, melt 3 bars of peppermint bark with 1 T of butter and 1 T heavy whipping cream.⁣
⁣
2. Dip the rim of your serving glass in the melted chocolate and then into confectioners swerve.⁣
⁣
3. Still using the double boiler, add a cup (8oz) of unsweetened almond milk  to the remaining melted chocolate. Whisk to combine.⁣
⁣
4. In a separate cup, froth 2 T heavy whipping cream with 2 drops liquid stevia.⁣
⁣
5. For the cocktail version, add 2 oz of vodka to the almond milk mixture. For the mocktail version, obviously, leave that out!⁣
⁣
6. Pour warm almond milk mixture into the serving glasses. Top each with half of the frothed whipping cream. Sprinkle with minced chocolate.⁣
⁣
7. Garnish with half a peppermint bar if desired. Pro tip: Use the edge of the saucepan from the double boiler to melt a notch in your chocolate so it fits on the edge of the glass.⁣

-High quality mayo like @primalkitchenfoods ⁣
-Spinach (optional)⁣

Mix it all up in the taste variations you prefer. If you need a starting point for amounts 3 cups turkey, 2T red onion, 1/3 cup chopped celery, 1/4 cup chopped walnut, 1 medium avocado, 2 tsp Herbes de Provence, 3 T mayo, 1 tsp salt and serve over 1 cup of raw spinach.⁣

If you're cooking for a few people or have really thick steaks, the reverse sear method is a life saver. If you haven't tried it yet you're missing out!⁣
⁣
Place steaks on a rack in a 200 degree oven. Cook until internal temperature of 100. Sear on the grill or in cast iron pan until desired internal temperature is reached. We find cooking to about 115 degrees and letting it rest for about 7 minutes gives us the perfect medium rare. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀

I filled it with chipotle pepper salsa, scrambled eggs, cheese, bacon and avocado. Melted everything and crisped in the skillet with butter. Awesome combo!⁣ ⠀

Taking photos can be an important part of tracking progress though! The scale isn't everything. Being able to see subtle changes over time can be a powerful motivator, maybe even more so than the scale! Especially if you start to be more active and work out.⁣

Even if you never show anyone else, take some photos to help document your journey. It can help you see and appreciate progress when things seem  stuck.⁣

On the right is me at an event a few years ago. My job was really getting to me and I wasn't taking good care of myself at all. I remember feeling so gross that day and hated the way the photo looked when I was supposed to just be enjoying time with friends.⁣
⁣
On the left is yesterday at the Kimmel Cancer Center with my dad who has been kicking cancer's butt for years now. I don't care how the photo looks I was just happy to be there.⁣
⁣
Thyroid cancer. Then it was chronic lymphocytic leukemia. Now it's large b cell lymphoma. Those last two are unbelievably aggressive. I don't think there is anyone else that could have done as well as he has! I believe that is in large part to having such a lifelong commitment to healthy lifestyle prior to getting sick. ⁣
⁣
I’m donating for a second round of bone marrow transplant using peripheral blood stem cells. I am thankful that I'm healthy enough and mentally strong enough to be able to do this...due in large part to my lifelong commitment to health which was largely influenced by what I saw my dad doing when I was young...eating whole foods, running, lifting weights, etc.⁣

Transplant technology has come a long way and there is now a lot of success with half match donors and a much less invasive way to donate. ⁣

A little background about me. My degree is in psychology with a minor in addiction studies. I went to graduate school for clinical neuropsychology. While I didn't finish that grad program, my lifelong interest in brain health has never changed. ⁣

I've also struggled on and off with depression my entire adult life...probably had something to do with how I got into that field! Struggled that is, until low carb and more specifically keto. My brain health has never been better!⁣

We've kind of got an echo chamber in this keto community. A lot of the people we interact with have already made the choice to commit to a keto diet and experience all of the wonderful benefits. ⁣

But I'm sure you all know plenty of people that are either unwilling or unable to change their diet. What if they could experience keto benefits without such a strict diet change? Do you think that would help them? Would we want them to experience that?⁣

There has been a whole bunch of discussion in the keto community lately about endogenous and exogenous ketones. No matter where you fall in that spectrum, you owe it to yourself to be educated and learn as much as you can. ⁣

This morning was one of those. We generally skip breakfast with intermittent fasting during the week, but often have brunch on Sundays. My husband woke up wanting his first meal earlier than usual after a light dinner the night before.
⁣
I however, wasn't hungry. But in an effort to be social and participate in the weekend brunch/breakfast habit I ate anyway. Now I've been feeling it ever since! My stomach is still full and feeling full of lead.⁣
⁣
It's ok. Intuitive eating is a constant practice and none of us will be perfect at it. Do your best though to listen to your body's cues and give it what it needs.⁣

On the left was me on a work trip a few years ago. Life was full of stress and it was definitely affecting my weight. I've always been on variations of whole food, but stress and lack of sleep will get you every time! Balancing your hormones matters if you want to reach your wellness and weight loss goals.⁣
